Does Honey Expire? How to Store Your NIYANTA Honey Properly

Archaeologists excavating ancient Egyptian tombs have made startling discoveries: pots of honey, thousands of years old, that were still perfectly edible. It begs the question: Does honey ever really expire? If you have a jar of NIYANTA raw honey sitting in your cupboard, here is everything you need to know about its shelf life and how to store it correctly.

Why Pure Honey Never Spoils

Honey is uniquely designed by nature to last forever. There are three main reasons for this:

  1. Low Moisture Content: Pure honey has very little water in it (usually under 18%). Bacteria and microorganisms need moisture to survive and multiply. In honey, they simply dehydrate and die.
  2. High Acidity: Honey is naturally acidic, with a pH usually between 3.2 and 4.5. This acidic environment is hostile to spoiling bacteria.
  3. Bees’ Magic Enzyme: When bees make honey, they add an enzyme called glucose oxidase. This enzyme breaks down sugars into hydrogen peroxide, acting as a natural antibacterial preservative.

How to Store Raw Honey

While honey doesn't "go bad," improper storage can ruin its flavor, degrade its enzymes, or cause it to ferment.

  • Keep it Airtight: Honey is hygroscopic, meaning it absorbs moisture from the air. If left unsealed, it will pull in water, which can lead to fermentation. Always tighten the lid securely.
  • Store in a Cool, Dark Place: Keep your jar in a kitchen cabinet away from direct sunlight and the heat of the stove. Excessive heat will destroy its nutritional benefits.

  • Use a Dry Spoon: Never double-dip a wet spoon into your jar. Introducing water or saliva can introduce bacteria and cause the honey to spoil.
